Since December 9th the restaurant Disfrutar opened in Barcelona. Runned by three of the great minds of gastronomy: Mateu Casañas, Oriol Castro and Eduard Xatruch; who were key to the creative cuisine of el Bulli side by side with Ferran Adrià. This restaurant is the second restaurant all these three managers open; the first called Compartir restaurant (Cadaques). We are honored to participate in this second gastronomic space by providing pieces for their dinnerware.
In this new restaurant, located at Villarroel street number 163 (Barcelona), revolves around a contemporary a la carte tasting menu concept. The gastronomic offer is expressed by an up to date language and technique with the main goal to explore flavours. The restaurant is inspired by the Mediterranean and Barcelona, which means that the dinnerware must fit into the global context and emphasise the intended speech of the gastronomic creations.
As an example of some of our pieces Disfrutar uses, we can show the one used to plate up the Vegetal Sashimi. In this case the smooth, elongated, flat and white support, yielding all the attention to the colourful shades and forms of the dish’s composition.
Also to plate up the trampantojo de pimientos rojos y verdes (red and green peepers’whim-trap, that as the name suggests are “chocolate peepers with salt and oil”), the chosen dinnerware is white. The plates’ color allows the gastronomic creation to stand out and take up prominence, all according to the chef’s intention: to make the diner believe that he is eating something other than the truth.
Also the Luesma & Vega dinnerware has been used for the sugared hazelnuts with elderberry, for the cockles with truffle cream and glacial ficoide or the marrow scallop with caviar.
